This kheer, does not have any Condensed milk in it.............then, do you wonder why I kept this title? The milk is condensed to that level, and it becomes so creamy, and thick, and you can even fool your guests, saying, "I have used condensed milk"! And, this kheer is so healthy, because I have used broken brown rice, and organic brown sugar. As we are drinking the kheer, the thought that brown sugar and brown rice are there, gives solace to us!!!

INGREDIENTS
Fresh milk (I used 3% ) - 6 cups
Saffron - a few strands
Cardamom powder - 1/2 tsp
Organic brown sugar - 1/3 cup
Broken brown rice - 1/2 cup

Yields 7-8 cups of kheer
Milk set to boil, with saffron strands and cardamom powder strewn over
Brown sugar measured and kept ready.
Let the rice cook nicely,check whether the rice is getting cooked to soft texture,
allow the milk to condense, acquiring a creamy, thick texture. It roughly took me 30 - 40 minutes for the milk to condense to the required consistency.

Sugar added, flames kept on the lowest, constantly keep stirring, taking care, so that it will not get stuck at the bottom.
Variations:
*White rice and white sugar can be used too. This makes the kheer/payasam still whiter in colour.
* This kheer can be served cold or hot. Both ways, it is very very tasty.
