This root vegetable derived this name because it very much resembles an elephant's foot. For some people, if they touch this vegetable, itching occurs. It is allergic to some too.But it is very good to cure hypertension and stress. It is also a natural remedy meant to cure constipation, it helps the problems caused by menopause, and also after child birth, helps the uterus to come back to normalcy soon. For ladies, this vegetable is a must to be added in diet.
Since it’s skin has lot of mud, it’s better to wash after chopping fine.
Then add the chopped, washed and cleaned Senai, with chilli powder, salt and curry leaves.
Keep on slow fire, and roast evenly. Now it is half done
Getting roasted beautifully
Done! Enjoy with hot rice, kuzhambu or rasam. This is a fantastic combination for any kind of koottu also.

Variation
Some people add tamarind juice, but I don't like it, and don't do it too. I feel, it makes the Senai soggy, and prevents it from getting crunchy and crispy.
