This is a signature dish of my Salem home......I don't know whether any household makes this.....This is so special to me...and for this Karthigai Deepam Neivedhyam, this is one among them.
Batter mixed with water. Consistency should be a little thinner than dosa batter
Ingredients
Rice flour - 1 1/2 cups
All purpose flour / maida - 1
Wheat flour - 1/2 cup
Salt to taste
Baking powder - a very small pinch
Coriander leaves - chopped - 1/2 cup
Grind and add
Grated coconut - 3 tsps
A small piece ginger
Green chillies - 3
Hing powder - 1/2 tsp

Prep time: 10 mts; Cooking time: roughly 30 mts
Yields 20 appams

Heat oil in the muffin pan, pour batter, keep the flames on the lowest and cook well.
Appams turned.
Added some chilli powder to this batch, since they were looking too white in colour.

Notes
*Though for the sweet and savory appams, the ingredient measurement is the same, due to addition of jaggery and banana, sweet appams recipe yields 25, whereas, this yields only 20.
*If you can manage a slightly high spice level, you can add 1 tsp chilli powder to the batter before itself.
