Mango Salsa........I have always loved this salsa, whenever I have eaten in Mexican restaurants abroad...they serve with huge heaps of chips. Chips & Salsa is a very famous starter of all the mexican restaurants, that too, served free, refilled again and again. Half our stomach becomes filled with this. I always used to think, had this scenario been in India, many people would have just eaten this and walked out!!
This salsa is tangy, sweet, spicy, absolutely delicious, and it is so refreshing. I thought of making this as an accompaniment to the Mexican Rice. "Salsa" in Italian means "Sauce".
The juicy sweet mangoes, the crunchy red bell peppers, accentuated by the spice of the green chillies, perked up by lemon juice.................we can just eat it as it is!!

Ingredients
Mango - 1, chopped fine (I used Banganapalli variety)
Onion - 1/2, chopped fine
Red bell pepper - 1/2, chopped fine
Tomato - 1/2, deseeded and chopped fine
Gren chillies - 2, chopped
Olive oil - 1 tsp
Red chilli flakes- 1/2 tsp
Lemon juice - 1/2 tbsp
Fresh coriander leaves, chopped
Salt - 1/4 tsp

Mangoes chopped, then onions and green chillies added
In the picture below, you can see the chopped tomatoes and red bell peppers being added, olive oil with chilli flakes added too, then lemon juice, coriander leaves and little bit salt.
Mix everything nicely, and refrigerate. Fruits and veggies will get nicely marinated, and when you eat this Salsa, you will not be able to tell which taste is predominant......is it sweet? is it spicy? is it tangy? is it crunchy?...well...I leave it to you...you must try it out and tell me.
Serve it cold with the hot Mexican Rice

*Can add cucumbers if you like it.
