Here is a very healthy Mexican recipe...needless to say, it is my d-i-l's.....she has modified the recipe from here.
This is an award winning recipe from that blog, but according to me, my d-i-l has made it much more interesting by adding several spices in it and hence, the taste level has gone beyond words.....more so, compared to the deep fried taco shells, this is so healthy, and she used whole wheat tortillas as shells.
So, daughter and d-i-l are being my Gurus in the US, and like Lord Shiva who took the mantra upadesh from his son Lord Muruga, I am also learning various new cuisines from them.
In the words of my husband, I am living in "borrowed glory"...as long as I enjoy it, and malpatskitchen feels proud about it, and this "borrowed glory" emanates from deserving kith and kin and well-wishers.........it is absolutely fine, right???

Ingredients
Whole wheat tortillas - 12
Green lentils - 1 1/2 cups,soaked in hot water
Cauliflower - 1, big, cut into florets
Chilli powder - 2 tsps
Garlic powder - 2 tsps
Onion powder - 2 tsps
Cumin/jeera powder - 3 tsps
White pepper powder - 1 tsp
Salt to taste
Mexican oregano - 3 tsps
Taco seasonings - 2 tsps
Tomato salsa - 1 1/2 cups
Cilantro - handful
Olive oil - 2 tsps
Mayonnaise - as needed
Hot sauce/sriracha sauce - as needed

Prep time: 30 mts; Cooking time: 40 mts;
Yields 12 soft tacos
The spices that have gone into this interesting dish
Cook the tortillas , till well cooked on both sides and keep aside
Cook the green lentils till soft, then add the tomato salsa to it and mix well. How to make tomato salsa? Just add some chopped tomatoes, green chillies, cilantro / coriander leaves, salt to taste and lemon juice. That's it.
Arrange the cauliflower florets on a baking tray, smear 2 tsps olive oil over them, add all the above shown spices and mix well, and bake in preheated oven at 425 degrees F , 25 minutes first, then flip over the florets, and bake for 15 minutes more. They are ready now
Keep a tortilla, arrange the green lentils, on top, keep some roasted cauliflowers, drizzle some mayo or hot sauce whatever you want, garnish some cilantro leaves, fold and devour!!!

* I doubt whether these green lentils are available in India. Well, any lentil is good for this...choice is ours.
*If you do not get whole wheat tortillas, just make small palm sized whole wheat rotis, then follow the same procedures and enjoy this great dish!!!
