I watched this being made in a TV show, hurriedly jotted the ingredients, because, it looked very unique..not the ordinary stuffings....and they are very healthy too...It turned out to be awesome, loved the crunchy bhindis, stuffed with various healthy things....
Bhindis are stuffed with Kalonji (Nigella seeds), which have tremendous anti-carcinogenic properties, jeera powder, chilli powder, chopped green chillies, dhania/coriander powder, black sesame seeds, which , though tiny are full of health benefits...lower cholesterol, blood pressure, help prevent diabetes, and last but not the least, peanuts, which are rich in energy, lower bad cholesterol,fight stomach cancer and heart diseases, reduce the chances of stroke, is a good anti-oxidant...and where do all these go??? inside Okras, which are rich sources of dietary fiber, rich in Vitamin A and C, good source of many essential minerals and rich in iron and calcium.

 Here are the trimmed Okras/bhindis, after being washed and wiped with a towel, all the stuffing ingredients are nearby.

Ingredients
Okras/bhindis - 16
A pinch salt for the outer cover to be added at the end.
Gingely oil  - 1/2 tsp


For the stuffing
Kalonji - 1 tsp
Jeera powder - 2 tsps
Chilli powder - 1 tsp
Green chilli - 1, chopped
Coriander powder - 2 tsps
Black sesame seeds - 2 tsps
Peanuts - 3 tsps
Salt to taste

For seasoning
Gingely oil - 1/1/2 tsps
 Cold pressed organic Coconut oil - 1/1/2 tsps

Serves 2

Okras gently slit in the middle carefully...


and kept aside


Heat a non stick pan, add 1/2 tsp oil, add kalonji, black sesame seeds and peanuts, and roast on slow fire


After 3-4 miutes, add all the spice powders and the chopped green chilli


Roast all together, till a nice aroma comes. Take care not to burn the spice powders


Blend the cooled roasted things, add salt to taste and mix well.


Keep in a separate bowl.


You can see the stuffed okras neatly arranged in a microwave steamer. Steam for 4 minutes, so that the okras will clasp tightly the spices stuffed inside.


After steaming


Heat a pan with gingely and coconut oils, gently lay the steamed bhindis one by one. Flames on the lowest.


Flip over after awhile.


Almost done


Roasted to perfection. If bhindis are not roasted to this kind of dark brown color, then they will be raw. At this time, add a pinch of salt for the outer side of the okras.


Serve the extremely tasty stuffed bhindis with soft phulkas and tirangi dhal.
